Parenting troubles? Can’t live with them, can’t live without them!

Well, I guess I could live without them, but then I wouldn’t have “growth moments” … cuz believe me I am learning a few things through parenting and disciplining a three year old!

The past week has been a little rough on the parenting front. I feel like living with and parenting a toddler is similar to the Superman Rollercoaster at Six Flags Great America. There are lots of peaks or good things along the journey, getting up to that peak takes a while but once you’re up there you feel awesome!

The view is spectacular! Until you get over that peak and start to feel the rollercoaster heading downhill FAST and there is nothing you can do but scream and brace yourself for the uphill battle to the next peak.

Can anyone relate?

Right now, if you can’t tell, I am on the “heading downhill fast kicking and screaming phase.” Cason is testing every limit he can. He wants to do things in HIS time. If I ask him to do something, he says “just a minute mommy …” or “hold on a sec” or “when I finish this.” Then he proceeds to tell me what to do.

He has also decided that he doesn’t want to be independent and dress himself anymore. He doesn’t want to go into rooms “by himself” he needs me or Mike there every time. He continues to directly disobey even though he knows the consequence. He almost wants to see how many warnings he can get before we have to enforce the consequence.

But the kicker was last night. I had asked him to do something. He disobeyed and refused to do it so he got a consequence, one that he was not very happy about. Normally, afterwards I will sit with him and ask him if he understands why mommy gave him a consequence, we will pray together, and then he tells whoever he hurt or disobeyed he is sorry.

He refused. He did not want to pray. And he also refused to say he was sorry to me. This was one of those parenting moments where I could choose to ignore it, let him not apologize, let him keep playing or press in a little and develop his character. I told him that I loved him, gave him a kiss, but that he will need to stay in his room until he was ready to say he was sorry. He started crying, more like screaming, and kicking. For 15 minutes he refused and it was killing me inside. Finally I heard him start saying, “mommy, mommy, mommy.” I opened the door, walked over to his bed, and gently put my hand on his tummy. He looked up at me and said “I’m sorry mommy.” Breakthrough!

Moments like that are so hard. I don’t want to listen to him cry, it breaks my heart, but it also breaks my heart that his sweet little 3 year old heart refused to apologize to me. That is not him. He is compassionate and tender hearted and says he’s sorry even when he hasn’t done anything. I value his heart so muchand want him to be a man who admits when he’s wrong, who shows compassion towards others, fights for what he believes in, and loves with everything he has. So I press in, even when it’s hard.

Parenting is so much more than just watching over your child and making sure their needs are met. We are molding and shaping little hearts so they are prepared to respond to everything the world has to throw at them, with character of heart. And that is an overwhelming roll.

How to Make Spiced Chai Banana Muffins

Now on to the recipe for today! Recently I received a big old box of treats from Bob’s Red Mill{giddy squeal} and I seriously couldn’t wait to dive in and start messing around in the kitchen.

I think I waited all of 24 hours before I ripped open the bag of Chai Protein Powder they sent and starting making these Spiced Chai Banana Muffins! I used my original moist Skinny Double Chocolate Banana Muffin recipe and tweaked it… basically I subbed the Chai Protein Powder for the Cocoa Powder and viola these muffins!

Even four days later that are still moist! This recipe has zero refined sugar and uses applesauce and coconut oil to keep the muffins tender and fall apart delicious! I am officially addicted to these muffins and so is everyone in my family. You’ll love the extra nutritional boost tucked away in these beauties! Just make a double batch, trust me! I wish I had!

Description

Healthy Spiced Chai Banana Muffins with a secret ingredient for an extra nutritional boost. These muffins are butter free, refined sugar free & delicious!

Ingredients

Scale

  • 3 bananas
  • ¼ cup of honey
  • 1 teaspoon of vanilla extract
  • ⅓ cup of unsweetened applesauce
  • ⅓ cup of coconut oil, melted
  • 1 egg
  • 3 tablespoons of Bob’s Red Mill Chai Protein Powder
  • 1⅔ cup of white whole wheat flour
  • ½ teaspoon of sea salt
  • 1 teaspoon of baking soda

Instructions

  1. Preheat oven to 375.
  2. In a large bowl, add bananas. Using a fork mash up bananas until just very small lumps are left. Add honey, vanilla extract, applesauce, coconut oil, and egg.
  3. Using a fork mix until combined.
  4. Add in chai protein powder, white whole wheat flour, salt, and baking soda. Using a spatula, mix until wet and dry ingredients are completely combined!
  5. Line each muffin tin with a cupcake liner (or spray with pam so muffins don’t stick to pan if not using liner).
  6. Fill each muffin tin ¾ of the way full.
  7. Bake for 15-17 minutes. Serve
