Bellini’s are a favorite of mine that I love to serve during the summer months. This beverage starts with classic flavors such as peach and sparkling white wine and added pomegranate flavor. It is the quintessential summer treat and makes a lovely addition to any party or brunch.

Summertime is a great time to bring back an old friend and introduce them to a new friend. I like to keep it simple when hosting a summer party. I keep it to a few drinks and like to prepare some appetizers before guests come over. I’ve always wanted to host a country chic party with string lights, lanterns, reclaimed wood table and chairs with a few signature drinks and light food. Peach PAMA Bellini

To make this co*cktail, you’ll need PAMA Liqueur, fresh peaches to make peach puree, a little sugar, water, honey and sparkling wine. I also like to use a fine mesh strainer and co*cktail shaker, but it’s not required. I use the fine mesh strainer to separate the skin from puree liquid but peeling the peaches will work too!

To start, slice two large peaches and place in a small pot on medium/low heat on the stove top. Add water and sugar and allow peaches to heat and juice, using a spatual to push down on the peaches. Cook for about 20 minutes then bring mixture to a blender and blend until smooth. You should have a nice puree, add some honey. The honey is a nice touch and adds a nice flavor to the peaches. Bring the mixture to a fine mesh strainer and separate the skins from the liquid, pushing the liquid through the strainer. Use a little water to work through the strainer a little. Discard the skins and pour puree into co*cktail shaker with PAMA Liqueur and shake. Pour sparkling wine into a large pitcher and mix with peach PAMA. Give it a stir and pour into beverage glasses.

Ingredients

  • 3 peaches
  • 3 tablespoon water
  • 2 tablespoons sugar
  • 1 tablespoon honey
  • 1/4 cup PAMA Liqueur Pomegranate
  • 1 bottle sparkling wine , chilled

Instructions

  • Dice 2 peaches with or without skin. Place in small saucepan over medium/low heat. Cook for a few minutes then add sugar and 2 tablespoons water to saucepan. Heat for about 20 minutes or more if peaches are tough. Use a spatula and press on peaches and stir occasionally. Remove from heat and place in blender. Blend peach mixture well then add honey. Pour into fine mesh strainer and use spatula to press down on mixture to separate liquid from skins. Skin mixture should become concentrated so use 1 tablespoon water at the end to clear it out once more then discard lumpy mixture. In a large pitcher, pour in sparkling wine and 1/4 cup PAMA Pomegranate Liqueur and peach puree then stir well. Refrigerate until ready to serve. Pour into glasses and garnish with sliced peaches.
